Tender Asparagus sautéed in garlic makes for the perfect and healthy side dish for any meat, poultry or fish dinners. If you have not been an asparagus fan before, perhaps you will be after eating it made this way.
Here is how you make it:
1. Crush 5 cloves of garlic with 1/4 tsp. salt in a mortar and 1/4 tsp. pepper. Add two tbsp. extra virgin olive oil and the juice of 1/2 lemon (2 tbsp.) to the garlic and mix well.
2. Bring a large pot of water with a pinch of salt to boil. Wash the asparagus and break of the bottom part of the asparagus. When the water boils, add the asparagus to the pan, cover, and turn off the heat. After 5 minutes, drain the water off.
3. Heat a pan to medium high heat and add 2 tbsp. avocado or canola oil. Stir fry the Asparagus for a few minutes until tender (how long depends how thick they are). They should have a little crunch still when they are done, and not be limp. Pour the garlic mix over the asparagus for the last minute, stir well to combine.
Here is what you need to make Asparagus with Garlic:
1 bunt asparagus
5 cloves garlic
2 tbsp. extra virgin olive oil
2 tbsp. avocado or canola oil
juice of 1/2 lemon (or 2 tbsp.)
Crush the garlic and add the olive oil, 2 tbsp. freshly squeezed lemon juice, 1/4 tsp. salt and 1/2 tsp. pepper to the garlic.
Bring a large pot of water with a pinch of salt to a boil. Add the asparagus, turn off the heat and let sit for 5 minutes.
Then sauté the asparagus with some avocado or canola oil in a pan over medium high heat until tender. When done they should still have a little crunch to them and not be limb. When they start to look done, pour the olive oil mix over the asparagus and sauté for a minute while stirring to combine.
